How long will a 250g camping gas canister last me?

1 should be plenty
I still use my Gaz stove - old but good, fast boil time. And I’ve never had trouble with it in the winter either.
Your 250g Gaz canister will be plenty for three days. You could do both meals and a cup of tea with no trouble.
If you’re not going solo you might check with your buddies and see what you can share to eliminate weight for all of you.
For three days - for 1 or 2 people , one canister should be enough for what you have planned. I have found I am able to cook about eight single person meals - soup, boiling water for coffee or tea, frying bacon and eggs - as long as it does not take too long to cook - eight meals per canister is about right.
